“Hojicha” refers to Japanese green tea that undergoes an extended roasting process, resulting in a distinct tea aroma. The name “hojicha” is derived from the unique method used to produce it.
To create the hojicha sauce, a high-quality hojicha is carefully chosen. The bread’s mochi component is prepared by combining glutinous rice flour with pure milk. On the outer layer of the bread, a crispy crust infused with hojicha flavor is applied, providing a satisfying crunch and a smoky aroma complemented by roasted and nutty notes.
